Today’s healthy lunch featuring a Salmon Sweet Potato Quiche and a side salad of roasted cherry tomatoes and mixed greens.
I love sweet potato. And I love salmon. And I love Quiche. so when the three things come together in one wonderful recipe, I know that’s a keeper. For once I used an internet recipe, but because I don’t have full pastry at home I substituted that for a whole grain pie crust pastry instead (gluten free millet pastry is the best) and as you can see, it turned out wonderfully.
